Skip take-out and try this this flavourful stir-fried vegetables and quinoa dish Ingredients 1 cup uncooked quinoa (roughly 3 cups cooked quinoa) 2 tbsp olive oil 1 tbsp garlic, minced 1 tbsp ginger, minced 8 oz mushrooms, sliced 12 oz broccoli florets, cut into small pieces 2 medium carrots, sliced into think sticks 1 cup peas 2-3 eggs, beaten in a bowl 4 tbsp reduced sodium soy sauce 2 scallions, sliced for garnish Preparation In a medium pot, cook quinoa according to package instructions.
